Winter-y Chestnut Sauce

Chestnuts is one of these ingredients I use once a year – when the winter season is here. Chestnuts have this perfect, smooth and warming taste that brings you back to the holiday season.
This recipe is really versatile. If you make it runny and smooth, you can use it as a sauce. If you make it thicker and rough, you can use it as a dip. Perfect to suits different occasions!

You may find the first step of this recipe a little odd, because it involves putting the chestnuts in the freezer… This simple step will simplify the entire peeling process – if you have peeled chestnuts before, you’ll know how tedious this can be otherwise!

Serves: 2


  • 200g Chestnuts
  • 2 to 4 cups of water
  • Salt, to taste

Preparation Steps

  1. Put the whole chestnuts in the freezer for 10 minutes
  2. Pre-heat the oven at 180 degrees celsius
  3. After 10 minutes, take the chestnuts out of the freezer and peel them
  4. Put the peeled Chestnuts on an oven tray and pop them in the oven for 10 minutes

Cooking Steps

  1. Heat up a small pot on high heat
  2. Add the chestnuts to the pot and swirl them around for a few seconds
  3. Cover the chestnuts with two cups of water
  4. Once the water is boiling, reduce the heat and leave to simmer for 10 minutes
  5. Keep an eye on the pan. If too much water evaporates too soon, add some water
  6. The Chestnuts are cooked when you can poke them with the point of a knife and the knife goes through smoothly
  7. Put the whole contents of the pan into a blender and blend until smooth
  8. Here again you can adjust the consistency by adding water to the blender
  9. If you have added too much water and the consistency is too liquid, you can pop the sauce back into the pan and heat it up for a few minutes, stirring regularly – this will thicken the texture. You can do this if you want to use this as a dip rather than a sauce.
  10. If the sauce still has some bits in, and you want it completely smooth, you can sieve it before serving
